Subscription Restoration
Unfortunately, uninstalling the app automatically cancels your app subscription. This is due to Shopify's billing system, which ties app subscriptions directly to their installation status. Once an app is uninstalled, its associated subscription is terminated.

Restoring Your Bundles
Your previously created bundles can be restored (automatically), but only if you reinstall the app within 48 hours of uninstallation. This is because Shopify Partners policy which states that apps must remove all customer data within a specified period after the uninstallation. If you reinstall the app after this period, your previous bundles will no longer be recoverable.
